Ingredients

  • 2 large frying chickens
  • 2 qt. water
  • 6 slices bacon
  • 1 Tbsp. salt
  • 4 carrots
  • 2 large onions
  • 1 pkg. frozen lima beans

  • 2 c. chopped celery
  • 2 or 3 large white potatoes
  • 1 (16 oz.) can tomatoes
  • 1 tsp. sugar
  • 1/2 pt. evaporated milk
  • 1/4 tsp. cayenne pepper

Instructions

  1. Boil the chickens and chopped bacon in water until tender.
  2. Remove from heat, cool, skin, and chop the chicken into large bite-sized pieces.
  3. Skim fat from the broth.
  4. Add carrots, onions, lima beans, corn, potatoes, and tomatoes to the broth.
  5. Cook vegetables until tender.
  6. Parboil the chopped celery in 1/2 cup water in a separate pan.
  7. Add the parboiled celery to the cooked vegetables, along with the chopped chicken and cayenne pepper.
  8. Adjust seasoning as needed.
  9. Add evaporated milk just before serving and heat without boiling.
  10. Serve in bowls with hot crusty French bread.
