Ingredients

  • 2 lb. fish fillets
  • 1/2 cup margarine
  • 1 or 2 cloves garlic, minced
  • 1 teaspoon basil
  • 3 tablespoons low sodium soy sauce
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon tarragon
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced scallions

Instructions

  1. Place fish fillets in a greased baking dish.
  2. In a saucepan, melt the margarine over medium heat.
  3. Add soy sauce, basil, rosemary, and tarragon to the melted margarine and stir well.
  4. Pour the herb mixture over the fish fillets.
  5. Bake at 375°F (190°C) for approximately 10 minutes per inch of fish thickness.
  6. When almost done, remove the fish from the oven and sprinkle with sliced mushrooms and scallions.
  7. Arrange lemon slices on top of the fish.
  8. Baste the topping with pan juices, then return to the oven and bake for an additional 5 minutes or until the fish flakes easily and the topping is heated through.
