Ingredients

  • 7 oz. whitefish
  • 5 Tbsp. water
  • 1 egg white
  • dash of ginger
  • 1 tsp. salt
  • 1 tsp. white wine
  • 1 Tbsp. cornstarch
  • 5 cups soup stock
  • 3.5 oz. tender green leaves
  • 1 tsp. salt

Instructions

  1. Remove skin from the whitefish, cut into small pieces, and grind while adding 5 tablespoons of water.
  2. Beat the egg white slightly and add it to the fish mixture.
  3. Add ginger, 1 teaspoon of salt, 1 teaspoon of white wine, and cornstarch to the mixture, then mix well.
  4. Form the mixture into small balls and drop them into boiling soup stock.
  5. Remove any foamy residue from the surface of the soup.
  6. Cut the tender green leaves into 1-inch pieces and add to the soup.
  7. Bring the soup to a boil, then add 1 teaspoon of salt, 1 tablespoon of white wine, and monosodium glutamate if desired.
  8. Serve hot.
