Fish Kabobs

Fish kabobs combine tender fish with colorful vegetables and a zesty marinade, perfect for quick grilling and gatherings, offering fresh citrus and smoky flavors.

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. Dijon mustard
  • 1 lb. fresh halibut, scrod, salmon or tuna steak
  • 1/2 large red onion
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 4 cherry tomatoes

Instructions

  1. Combine the olive oil, lime juice, and Dijon mustard in an 8 x 8 inch glass baking dish. Stir to blend.
  2. Cut the fish into sixteen 1-inch cubes. Add the fish to the marinade in a single layer. Cover and marinate in the refrigerator for 5-10 minutes.
  3. Turn the fish cubes to coat evenly and chill for 5 minutes longer.
  4. Preheat the broiler.
  5. Drain the fish cubes, reserving the marinade.
  6. Separate the onion layers slightly.
  7. Thread the fish and vegetables onto four skewers, alternating fish cubes with onion, peppers, and cherry tomatoes.
  8. Brush the kabobs lightly with the reserved marinade.
  9. Place the skewers on a broiler pan and broil 4 inches from the heat source for about 3 minutes.
  10. Turn the kabobs and brush again with the marinade.
  11. Broil for an additional 3-4 minutes or until the fish is no longer translucent and the vegetables are crisp-tender.
