Ingredients

  • 3 1/2 Tbsp. butter
  • 3 1/2 Tbsp. flour
  • 2 c. milk
  • 1/8 tsp. paprika
  • 2/3 tsp. salt
  • 1/3 c. bread crumbs
  • 2 c. cooked fish

Instructions

  1. Melt butter in a saucepan, add flour, and cook until smooth.
  2. Gradually stir in milk and cook until the mixture thickens.
  3. Add paprika, salt, and bread crumbs to the sauce.
  4. Remove from heat and cool slightly.
  5. Add flaked cooked fish to the sauce and mix well.
  6. Stir in egg yolks and fold in stiffly beaten whites.
  7. Pour the mixture into a greased baking dish.
  8. Bake in a moderately hot oven until the souffle is firm and golden.
