Ingredients

  • 8 oz. broad egg noodles
  • 4 eggs
  • 2 to 3 Tbsp. melted unsalted butter or margarine
  • 1/2 lb. cottage cheese
  • 1 c. sour cream
  • 1 c. milk
  • 1/2 c. sugar
  • 1 (8 oz.) can crushed pineapple with juice
  • 2 to 3 apples
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • vegetable oil spray

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Parboil noodles in salted water, then rinse and drain.
  3. Combine eggs and melted butter in a bowl and beat well.
  4. Mix in the sugar, then add the cottage cheese, sour cream, milk, crushed pineapple with juice, vanilla, and cinnamon. Mix well.
  5. Break up any lumps in the mixture.
  6. Add the cooked noodles and stir to combine everything evenly.
  7. Spray a 9 x 13-inch baking dish with vegetable oil spray.
  8. Pour the noodle mixture into the prepared dish.
  9. Bake for 50 to 60 minutes until golden and a knife inserted into the center comes out clean.
  10. Allow to cool slightly, then cut into squares and serve warm.
