Ingredients

  • 4 lb. fresh or frozen dressed striped bass or other fish
  • 2 cloves garlic
  • 3 Tbsp. lime juice
  • 1/4 tsp. pepper
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 Tbsp. butter or margarine
  • 2 medium tomatoes, peeled, seeded and chopped
  • 7 1/2 oz. can or 1 1/2 cups crab meat, drained, flaked and cartilage removed
  • 1/4 cup dry white wine

Instructions

  1. Thaw the frozen fish if necessary and cut it in half lengthwise.
  2. Remove the bones from the fish.
  3. Chop the garlic and rub it over all surfaces of the fish.
  4. Sprinkle the fish with lime juice, pepper, and 1 teaspoon of salt.
  5. Place one half of the fish, skin side down, in a well-greased 15 x 10 x 1-inch pan.
