Ingredients

  • 1 lb. flounder or sole
  • 1/2 cup shredded Swiss cheese
  • 1 (2 1/2 oz.) jar sliced mushrooms, drained
  • 1/4 cup low-fat yogurt
  • 1 tablespoon chives
  • 1 tablespoon chopped pimento
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons bread crumbs
  • 1/4 teaspoon paprika
  • 1 tablespoon plain low-fat yogurt

Instructions

  1. Thaw the fish if frozen.
  2. Cut the fish into 4 portions and make 4 rectangles.
  3. In a bowl, combine shredded Swiss cheese, chives, chopped pimento, salt, and pepper.
  4. Spread the cheese mixture on each fish rectangle.
  5. Roll up the fillets around the filling to form roll-ups.
  6. Place the roll-ups seam side down in a sprayed loaf pan.
  7. Combine bread crumbs and paprika in a small bowl.
  8. Brush the fish roll-ups with 1 tablespoon of plain low-fat yogurt.
  9. Sprinkle the bread crumb mixture over the top.
  10. Bake in a 350°F oven for 20 to 30 minutes or until the fish flakes easily with a fork.
