Ingredients

  • 2 lb. ground beef
  • 2 pkg. taco seasoning
  • 2 Tbsp. cumin
  • 2 Tbsp. jalapeno peppers, chopped
  • 2 tsp. crushed red peppers
  • 1 pkg. 8-inch flour tortillas
  • 2 c. shredded cheese (Cheddar or Monterey Jack)
  • 2 cans Ro-Tel tomatoes

Instructions

  1. Brown the ground beef in a skillet and drain excess fat.
  2. Add taco seasoning, cumin, chopped jalapeno peppers, crushed red peppers, and 1½ cups water to the beef.
  3. Simmer the mixture for 8 to 10 minutes until the water reduces and flavors meld.
  4. Warm the flour tortillas and fill each with the beef mixture.
  5. Sprinkle shredded cheese on top and add Ro-Tel tomatoes as desired.
