A light, sweet layered salad with pineapple, walnuts, and vanilla wafer crumbs, perfect for brunch or dessert gatherings, offering a delightful crunch and tropical flavor.

Ingredients

  • 1 c. vanilla wafer crumbs
  • 2 c. powdered sugar
  • 9 oz. can crushed pineapple
  • 3/4 c. soft margarine
  • 2 eggs
  • 1/2 c. walnuts

Instructions

  1. Drain pineapple and spread half of the wafer crumbs on the bottom of the dish.
  2. Cream margarine and powdered sugar; add egg yolks.
  3. Fold in slightly beaten egg whites.
  4. Beat all together; fold in pineapple and chopped nuts.
  5. Pour mixture over wafer crumbs and top with remaining crumbs.
  6. Refrigerate for 5 hours or overnight.
