- Saute chopped onion in 1/2 stick butter or oleo until soft.
- Beat eggs with salt and pepper.
- Add milk, shredded cheese, well drained frozen spinach, and cooled sautéed onion to the eggs.
- Mix well and pour into an unbaked 9-inch deep dish pie shell.
- Bake at 375°F until crust is golden brown and quiche is set in the center.
- Let stand at least 10 minutes before serving.
- Serve with picante if desired.
