Florentine Quiche

Ingredients

  • 5 eggs
  • 1/4 cup milk (half and half)
  • 6 oz. shredded Colby and Monterey Jack cheese
  • 1/2 cup well drained frozen spinach
  • 1 cup chopped onion
  • salt and pepper to taste
  • 1 9-inch deep dish pie shell

Instructions

  1. Saute chopped onion in 1/2 stick butter or oleo until soft.
  2. Beat eggs with salt and pepper.
  3. Add milk, shredded cheese, well drained frozen spinach, and cooled sautéed onion to the eggs.
  4. Mix well and pour into an unbaked 9-inch deep dish pie shell.
  5. Bake at 375°F until crust is golden brown and quiche is set in the center.
  6. Let stand at least 10 minutes before serving.
  7. Serve with picante if desired.
