Ingredients

  • 8 oz. cream cheese
  • 2 eggs
  • 1 tsp. vanilla
  • 5 tsp. cornstarch
  • 1 unbaked 9-inch pie shell
  • 1/2 cup sugar
  • 1 cup sour cream
  • 2 packages frozen raspberries
  • 1 cup whipping cream or 2 cups Cool Whip

Instructions

  1. Blend cream cheese, sugar, and eggs until smooth. Add vanilla and blend again.
  2. Pour the mixture into the unbaked pie shell and bake at 375°F (190°C) for 30 minutes.
  3. Remove from oven and spread sour cream evenly over the top. Chill for 1 hour.
  4. In a saucepan, mix frozen raspberries and cornstarch.
  5. Cook until the mixture thickens and then cool completely.
  6. Whip the heavy cream or Cool Whip until fluffy.
  7. Fold the whipped cream into the cooled berry mixture.
  8. Spoon the berry and whipped topping mixture over the baked cream cheese layer in the pie shell.
