Ingredients

  • 1/4 cup sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 2/3 cup juice from crushed pineapple
  • 1 well beaten egg
  • 16 large marshmallows or 1 heaping cup miniature marshmallows
  • 2/3 cup crushed pineapple
  • 1/2 cup cream, whipped

Instructions

  1. Mix flour, sugar, and salt in a saucepan.
  2. Add pineapple juice and blend well.
  3. Cook over low heat until thick, stirring constantly.
  4. Add a small amount of hot mixture to the beaten egg, then stir back into the hot mixture.
  5. Cook until thick.
  6. Add marshmallows; stir until melted.
  7. Add crushed pineapple and mix well.
  8. Chill for 1 hour.
  9. Fold in whipped cream.
  10. Pour into an 8-inch pie pan lined with vanilla wafers.
  11. Chill or freeze before serving.
