  5. Add vanilla and almond extracts.
  6. Beat until glossy and stiff peaks form.

  8. Turn off the oven and place the pan inside overnight to dry out.
  9. Next day, carefully remove the torte from the pan.
  10. Run a knife around the edge of the pan to loosen.
  11. Refrigerate until ready to serve.
