Ingredients

  • 1 medium cucumber, peeled and seeded
  • 1 1/2 cups low-fat yogurt
  • 1/2 teaspoon salt
  • 1 tablespoon chives, chopped or scallion tops, finely chopped
  • 1/4 teaspoon dried mint or 1 teaspoon fresh mint
  • 1/4 teaspoon freshly ground black pepper
  • dash of Worcestershire sauce

Instructions

  1. Puree the peeled and seeded cucumber with 1/2 cup of yogurt until smooth.
  2. Add the remaining ingredients: salt, chopped chives or scallion tops, dried or fresh mint, black pepper, and a dash of Worcestershire sauce.
  3. Mix well and refrigerate for at least 1 hour before serving.
