Ingredients

  • 1 lb frankfurters
  • 2/3 cup reconstituted nonfat dry milk
  • 1 tablespoon all-purpose flour
  • 8 oz process cheese spread, cut up
  • 2 tablespoons minced onion
  • 2 teaspoons finely snipped parsley
  • 8 medium potatoes, cooked, peeled and sliced

Instructions

  1. Reserve 3 frankfurters; slice the remaining frankfurters and set aside.
  2. In a saucepan, stir milk into flour until smooth.
  3. Add cheese spread; cook and stir until thickened and smooth.
  4. Add minced onion, snipped parsley, and 1/2 teaspoon salt to the cheese mixture.
  5. Fold the cheese mixture into the cooked, peeled, and sliced potatoes and sliced frankfurters.
  6. Turn the mixture into a 2-quart casserole dish.
  7. Bake, covered, at 350°F for 40 minutes.
  8. Halve the reserved frankfurters and arrange in a pinwheel pattern on top of the casserole.
  9. Bake, uncovered, for an additional 10 minutes.
  10. Garnish with parsley, if desired, and serve.
