  • 1 apple, peeled and chopped fine
  • 1 (No. 2 1/2) can sauerkraut, drained
  • 1 1/2 c. Sauterne wine
  • 1/2 c. water
  • 2 Tbsp. brown sugar
  • salt and pepper
  • 1 lb. frankfurters or knockwurst

Instructions

  1. Melt butter in a large frying pan.
  2. Add chopped onion and apple, and sauté slowly until the onion is yellow.
  3. Add drained sauerkraut, 1 cup of Sauterne wine, water, brown sugar, salt, and pepper.
  4. Mix well with a fork, cover, and simmer for 1 hour, stirring occasionally.
  5. Arrange frankfurters on top of the kraut, and pour the remaining 1/2 cup of wine over them.
  6. Cover and simmer for an additional 15 minutes.

Tips & Substitutions

For a richer flavor, consider using a combination of white wine and apple cider instead of just Sauterne. If you prefer a vegetarian version, replace frankfurters with a plant-based sausage or omit them entirely. To enhance sweetness, add a pinch of cinnamon to the sauerkraut mixture. Make sure to drain the sauerkraut well to avoid excess liquid in the dish.

Serving Suggestions

Serve this dish with crusty bread or over a bed of mashed potatoes for a comforting meal. It pairs beautifully with Swiss String Beans for a balanced side. For a heartier option, consider serving it alongside Tin Can Dogs for a fun twist. Garnish with fresh parsley for color and added flavor.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a saucepan over low heat, adding a splash of water or wine if needed to prevent sticking. You can also reheat in the microwave, covered, until heated through, stirring halfway.
