Frankfurter Corn Chowder

Ingredients

  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 1/4 cup margarine
  • 1 cup potato, peeled and diced
  • 2 cups water
  • 1 teaspoon salt
  • 1 lb frankfurter, sliced
  • 1/2 bay leaf, crumbled
  • 1/2 teaspoon dried thyme
  • 3 cups corn kernels
  • 3 tablespoons flour
  • 1/2 cup milk, cold
  • 1 1/2 cups milk, hot

Instructions

  1. Saute onion and celery in margarine. Add potato, water, salt, frankfurters, bay leaf and thyme. Cover and simmer until potatoes are almost tender.
  2. Add corn.
  3. Blend flour and cold milk into a smooth paste. Add a little of the vegetable mixture to this and stir slowly into vegetable-frankfurter mixture. Simmer 5 minutes.
  4. Add hot milk and blend.
  5. Garnish with peas.
  6. Serves 6.
