Ingredients

  • 6 frankfurters
  • mustard
  • 2 cups mashed potatoes
  • 1/4 cup minced onions
  • 1 to 2 tablespoons chopped pimientos
  • 1/4 cup chopped parsley

Instructions

  1. Pour boiling water over the frankfurters and cover; let stand for 8 minutes.
  2. Slit each frankfurter lengthwise and spread with mustard.
  3. Combine the mashed potatoes, minced onions, chopped pimentos, and chopped parsley.
  4. Spread the seasoned mashed potato mixture over the split frankfurters.
  5. Brown the assembled frankfurters in a broiler or oven until golden.
