Ingredients

  • 1 lb butter
  • 2 cups sugar
  • 6 eggs
  • 4 cups plain flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple
  • 4 cups pecans
  • 2 tsp vanilla

Instructions

  1. Cream butter with sugar.
  2. Add salt and baking powder to three cups of flour.
  3. Add eggs to the creamed mixture one at a time, alternating with one cup of the flour mixture each time.
  4. Add vanilla to the batter.
  5. Mix candied cherries, candied pineapple, and pecans with the remaining cup of flour.
  6. Fold the fruit and nut mixture into the batter.
  7. Spray a bundt pan with Pam.
  8. Preheat oven to 250°F.
  9. Bake the cake for 2 1/2 hours.
  10. Cool in the pan for 20 minutes.
