Ingredients

  • 1 lb ground beef
  • 12 to 15 Ritz crackers
  • 1 egg
  • 1 onion
  • dash garlic salt
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 can tomato soup
  • 4 or 5 potatoes
  • 3 or 4 carrots

Instructions

  1. Combine ground beef, crushed Ritz crackers, egg, chopped onion, garlic salt, salt, and pepper in a mixing bowl.
  2. Mix well. Make a hole in the mixture and fill with about 1/4 cup of undiluted tomato soup.
  3. Mix again, working the tomato soup into the mixture.
  4. Form the mixture into a loaf and place in a 9 x 13-inch dish coated with vegetable oil.
  5. Dilute the remaining tomato soup with 3/4 cup water and pour over the meat loaf.
  6. Surround the meat loaf with chunks of potatoes and carrots.
  7. Season the vegetables with salt and pepper to taste.
  8. Cover the dish with foil and bake at 350°F for 1 1/2 hours.
  9. Remove the foil and bake until the meat loaf is brown on top.
