A vibrant, sweet and tangy freezer relish combining corn, peppers, cabbage, and spices, perfect for adding flavor to summer dishes or enjoying as a condiment year-round.

Ingredients

  • 10 ears corn
  • 3 green peppers, chopped
  • 3 red peppers, chopped
  • 2 large onions, finely chopped
  • 1 small head cabbage, shredded
  • 2 c. sugar
  • 1 Tbsp. dry mustard
  • 1 Tbsp. celery seed
  • 1 Tbsp. salt
  • 1 1/2 tsp. ground turmeric
  • 2 1/2 c. cider vinegar
  • 1/2 c. water

Instructions

  1. Cut the corn off the cobs.
  2. Combine all ingredients in a large, heavy saucepan.
  3. Bring to a boil; reduce heat and simmer for 20 minutes.
  4. Cool the mixture.
  5. Ladle into pint-sized Ziploc bags.
  6. Seal and freeze.
