Ingredients

  • 7 cups cucumbers, sliced thin, unpeeled
  • 1 cup onion
  • 1 green pepper (if desired)
  • 1 teaspoon salt
  • 1 cup vinegar
  • 2 cups sugar
  • 1 teaspoon celery seed

Instructions

  1. Mix together the cucumbers, onion, green pepper (if desired), and salt in a large mixing bowl.
  2. Set aside for 2 hours, then drain.
  3. Mix together vinegar, sugar, celery seed, and mustard seed in a cooking pan; bring to a boil. Remove from heat and set aside to cool.
  4. Pour the cooled mixture over the drained cucumbers and vegetables.
  5. Refrigerate for 2 to 3 days to develop flavor, then freeze in small amounts for storage.
