Ingredients

  • 1/2 cup cooking oil
  • 1 cup applesauce
  • 2 cups sugar
  • 3 eggs
  • 3 cups all-purpose flour, sifted
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 3 large apples, peeled and cut into small pieces
  • 1 cup chopped pecans

Instructions

  1. Combine cooking oil, applesauce, sugar, and eggs; beat for 3 minutes at medium speed.
  2. Add the flour, salt, baking soda, and vanilla to the mixture.
  3. Beat until smooth.
  4. Fold in the peeled and small-cut apples and chopped pecans.
  5. Pour batter into a greased and floured cake pan.
  6. Bake at 325°F for 1 hour and 20 minutes.
