French Bistro Cake

Ingredients

  • 1 1/2 c. powdered sugar
  • 1 c. flour
  • 12 egg whites
  • 1 1/2 tsp. cream of tartar
  • 1 tsp. vanilla
  • 1 tsp. almond extract
  • 1 c. sugar
  • 8 oz. whipping cream
  • 3 kiwi
  • 2 c. strawberries
  • 1 c. raspberries
  • 1 c. blueberries

Instructions

  1. Sift powdered sugar and flour together.
  2. Beat egg whites, cream of tartar, vanilla and almond until peaks form.
  3. Gradually add sugar.
  4. Continue beating until stiff peaks form.
  5. Fold in flour mixture slowly.
  6. Spoon into two 9-inch round cake pans. Bake at 350° for 30 to 40 minutes.
  7. Beat whipping cream, sugar and vanilla until stiff peaks form.
  8. (Chill bowl, whipping cream and beaters first.)
  9. Place 1 cake layer on plate.
  10. Spread top with half cream and half of fruit.
  11. Place next layer on top and spread with remaining cream, then decorate with remaining fruit. Refrigerate until served.
