Ingredients

  • 4 large onions, thinly sliced
  • 1/4 cup butter or margarine (divided)
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (10 1/2 oz.) condensed beef consomme
  • 1/4 cup cooking sherry
  • 4 slices French bread, cut 1 inch thick
  • 1 cup shredded Swiss cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

  1. In a large skillet, sauter onions in 2 tablespoons butter until tender.
  2. Sprinkle with flour and stir to combine.
  3. Add salt and pepper; cook and stir for about 3 minutes.
  4. Pour in the undiluted beef consomme and sherry; cook and stir until thickened.
  5. Pour the onion mixture into a shallow 2-quart baking dish or individual dishes.
  6. Spread remaining butter on both sides of the bread slices; place on a baking sheet.
  7. Bake the bread at 350°F for 10 to 15 minutes or until golden brown.
  8. Place the toasted bread on top of the onion mixture.
  9. Sprinkle with shredded Swiss cheese and Parmesan cheese.
  10. Bake uncovered for an additional 10 to 15 minutes until cheese is melted and bubbly.
