Ingredients

  • 1 red pepper
  • 1 green pepper
  • 1 yellow onion
  • 2 zucchini
  • 1/2 eggplant
  • 4 tomatoes or 14 1/2 oz. crushed tomatoes
  • 2 Tbsp. olive oil
  • 1-2 cloves garlic
  • 1 sprig dried or fresh thyme
  • 1 tsp. basil leaves
  • 1 Tbsp. chopped parsley
  • salt

Instructions

  1. Dress peppers and cut into slices; peel onion and cut into wedges; peel and cut eggplant and zucchini into cubes or slices.
  2. Peel tomatoes and cut into wedges.
  3. In a skillet, sauté peppers and onion in olive oil until soft.
  4. Add eggplant and tomatoes to the skillet.
  5. Add minced garlic, thyme, and basil to the mixture.
  6. Sprinkle chopped parsley over the vegetables.
  7. Cover the skillet.
  8. Cook over medium-low heat for 30 minutes.
  9. Season with salt and pepper before serving.
