Ingredients

  • 3 lb. tongue
  • 1 onion, quartered
  • 1 Tbsp. salt
  • 6 whole peppers
  • 2 bay leaves
  • 6 whole cloves
  • 4 cups boiling water

Instructions

  1. Scrape the tongue and rinse it thoroughly.
  2. Scald the tongue in boiling water for a few minutes.
  3. Place the tongue, quartered onion, salt, whole peppers, bay leaves, and cloves in a pot with 4 cups of boiling water.
  4. Bring to a boil, then reduce to medium heat and simmer for about 90 minutes, or until the tongue is fork‑tender.
  5. Remove the tongue from the pot while still hot, peel off the skin, and let it cool slightly before slicing.
  6. Serve the sliced tongue warm or at room temperature, accompanied by the cooking liquid as a flavorful sauce.
