Fresh Broccoli Casserole

A comforting broccoli casserole featuring tender broccoli, creamy cheese sauce, and a crunchy saltine topping, perfect for family dinners or potlucks. Delicious and satisfying.

Ingredients

  • 1 large bunch broccoli, coarsely chopped
  • 6 Tbsp butter
  • 6 Tbsp flour
  • 2 c milk
  • 1 c grated Mozzarella cheese
  • 2 eggs
  • 1 tsp thyme
  • 1 tsp salt
  • dash white pepper
  • 1/3 c saltine crumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook broccoli until just tender, then drain and set aside.
  3. In the same pan, melt butter and blend in flour.
  4. Add milk gradually, cooking and stirring until thickened.
  5. Add grated mozzarella cheese and stir until melted.
  6. Beat eggs lightly in a separate bowl.
  7. Add some of the cream sauce to the eggs, blend, then add back to the sauce.
  8. Add thyme, salt, and white pepper to the sauce.
  9. Fold in cooked broccoli and pour into a greased 2-quart casserole dish.
  10. Top with saltine crumbs.
  11. Bake for 30 minutes until bubbly and golden.
