Fresh Corn And Pepper Bread
Ingredients
- 1 c. unsifted all-purpose flour ⓘ
- 2/3 c. yellow corn meal ⓘ
- 1/4 c. sugar ⓘ
- 1/2 tsp. baking powder ⓘ
- 1/2 tsp. baking soda ⓘ
- 1/2 tsp. salt ⓘ
- 1 c. buttermilk, warmed ⓘ
- 1/2 c. (1 stick) butter, melted ⓘ
- 1 large egg ⓘ
- 1 c. fresh or thawed whole kernel corn
- 1/2 c. finely chopped sweet green pepper ⓘ
- 1 Tbsp. canned green chilies, chopped ⓘ
Instructions
- Heat oven to 350°.
- Grease a 9-inch round baking pan.
- In large bowl, combine flour, corn meal, sugar, baking powder, baking soda and salt.
- In small bowl, combine buttermilk, butter and egg.
