Ingredients

  • 1/4 cup butter or margarine
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1 1/2 cups flour
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 2 cups fresh fruit (rhubarb is best)
  • 1/2 cup strawberry gelatin (3 oz. package)

Instructions

  1. Mix the first eight ingredients to make a stiff cake batter.
  2. Pour the batter into a slightly greased 6 x 10-inch glass baking dish.
  3. Place the rhubarb on top of the batter.
  4. Sprinkle the strawberry gelatin over the rhubarb and batter.
