Ingredients

  • 3 cups fresh fruit, cut-up
  • 2/3 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter or margarine
  • 1 cup sifted flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Arrange the cut-up fresh fruit in a square or round pan.
  2. Sprinkle the fruit with a mixture of 2/3 cup sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon.
  3. Dot the fruit with 2 tablespoons butter or margarine.
  4. In a bowl, sift together 1 cup flour, 2 tablespoons sugar, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
  5. Add 2 tablespoons oil, 1/2 cup milk, and 1 egg to the dry ingredients.
  6. Stir with a fork until blended to form a dough.
  7. Drop spoonfuls of the dough over the fruit in the pan.
  8. If desired, spread the dough with a spatula for an even layer.
  9. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes or until bubbly and light brown.
  10. Serve warm.
