Fresh spring rolls are light, vibrant, and packed with flavors like prawns, basil, and vegetables, perfect for a healthy appetizer or snack for any occasion.

Ingredients

  • 10 cooked prawns, halved lengthwise
  • 50 g mung bean vermicelli-dried noodles
  • 2 cups hot water
  • 8 dried rice paper wrappers
  • 8 fresh basil leaves or coriander leaves
  • 1 medium carrot, cut into short thin strips
  • shredded lettuce
  • 3 eggs, scrambled

Instructions

  1. Cook the noodles according to the package instructions; let cool.
  2. Place all ingredients in an assembly line to construct the spring rolls.
  3. Fill a pie plate with very warm but not hot water.
  4. Soak each rice paper wrapper just until soft.
  5. Place the wrapper on your work surface and fill with lettuce, carrot, scrambled eggs, and a small amount of noodles, about one-quarter of the way up from the bottom of the wrapper.
  6. Place 1 to 2 basil or coriander leaves one-quarter of the way down from the top, then add 3 prawn halves on top of the leaves.
  7. Fold the sides in and tightly roll up like a burrito to complete the spring roll.
