- Cook the noodles according to the package instructions; let cool.
- Place all ingredients in an assembly line to construct the spring rolls.
- Fill a pie plate with very warm but not hot water.
- Soak each rice paper wrapper just until soft.
- Place the wrapper on your work surface and fill with lettuce, carrot, scrambled eggs, and a small amount of noodles, about one-quarter of the way up from the bottom of the wrapper.
- Place 1 to 2 basil or coriander leaves one-quarter of the way down from the top, then add 3 prawn halves on top of the leaves.
- Fold the sides in and tightly roll up like a burrito to complete the spring roll.
