Ingredients

  • 1 lb. fresh string beans
  • 1 tsp. salt
  • 2 Tbsp. olive oil or butter
  • 2 Tbsp. flour
  • 1/4 tsp. black pepper
  • 1/4 tsp. paprika
  • 2 potatoes, diced
  • 1 pt. sour cream

Instructions

  1. Cook the cut beans and potatoes in 5 cups of salted water for 15 minutes.
  2. In a frying pan, brown the flour in oil or butter.
  3. Add paprika, black pepper, and 1/4 cup cold water to the flour mixture.
  4. Stir until smooth.
  5. Add sour cream to the mixture.
  6. Add this mixture to the cooked beans and potatoes.
  7. Bring to a boil and simmer for a few more minutes.
