Ingredients

  • 4 cups apples, peeled and diced
  • 2 cups sugar
  • 1 cup oil
  • 2 eggs
  • 1 cup broken nuts
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 300°F (150°C). Grease and flour a 13 x 9 x 2-inch flat pan.
  2. Blend peeled and diced apples with sugar, oil, well-beaten eggs, nuts, and vanilla until well combined.
  3. In a separate bowl, mix flour with baking soda, cinnamon, and salt.
  4. Add the dry mixture to the apple mixture and stir until just combined.
  5. Pour the batter into the prepared pan.
  6. Bake very slowly for 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Serve warm, optionally with Cool Whip or plain.
