Ingredients

  • 12 artichoke hearts
  • 2 eggs
  • 6 Tbsp. olive oil
  • 1 cup bread crumbs
  • 1 Tbsp. chopped parsley
  • salt

Instructions

  1. Sprinkle artichoke hearts with salt and pepper.
  2. Mix chopped parsley with bread crumbs.
  3. Beat eggs slightly.
  4. Dip artichoke hearts in beaten eggs; roll in bread crumbs mixture.
  5. Fry in hot oil about 3 minutes on each side or until golden brown.
  6. Serve very hot.
