Fried Beef With Spring Onion

Tender beef slices stir-fried with fresh spring onions and ginger, enhanced with soy sauce and a light beaten egg, creating a flavorful and quick Asian-inspired dish perfect for any meal.

Ingredients

  • 325 gms. fillet steak
  • 1 tsp. salt
  • 3 tsp. thin soy sauce
  • pepper
  • 1 Tbsp. tapioca flour
  • 1/4 tsp. bicarbonate of soda
  • 8 cm piece young ginger
  • 5 stalks spring onions
  • 1 egg
  • 4 Tbsp. oil

Instructions

  1. Clean and slice the beef thinly across the grain.
  2. Season the beef with salt, soy sauce, pepper, tapioca flour, and bicarbonate of soda. Mix thoroughly.
  3. Rub a pinch of salt into the sliced ginger and wash away the salt.
  4. Beat the egg with pepper and 1/2 tablespoon of oil.
  5. Heat the oil and lightly fry the ginger for a minute.
  6. Add the sliced beef, spring onions, and 1 cup of water.
  7. Cover the pan and cook for 3 minutes.
  8. Mix the ingredients well for a few minutes until the beef changes color and ingredients are well combined.
  9. Make a well in the center of the ingredients and pour in the beaten egg.
  10. Mix well and serve immediately.
