Fried Beef With Spring Onion

- Clean and slice the beef thinly across the grain.
- Season the beef with salt, soy sauce, pepper, tapioca flour, and bicarbonate of soda. Mix thoroughly.
- Rub a pinch of salt into the sliced ginger and wash away the salt.
- Beat the egg with pepper and 1/2 tablespoon of oil.
- Heat the oil and lightly fry the ginger for a minute.
- Add the sliced beef, spring onions, and 1 cup of water.
- Cover the pan and cook for 3 minutes.
- Mix the ingredients well for a few minutes until the beef changes color and ingredients are well combined.
- Make a well in the center of the ingredients and pour in the beaten egg.
- Mix well and serve immediately.
