Fried Cottontail Rabbit!

Ingredients

  • rabbit
  • salt
  • vinegar
  • flour
  • salt and pepper
  • 1 egg
  • 1/4 c. milk
  • cracker or bread crumbs
  • 1/4 c. lard or shortening

Instructions

  1. Soak a cleaned rabbit in salt and vinegar water for 8 or 10 hours.
  2. Then cut into pieces.
  3. Sprinkle with flour, salt and pepper.
  4. Dip pieces in a beaten mixture of egg and milk, then roll each piece in cracker or bread crumbs.
