- Line a muffin pan with 12 cupcake liners.
- Melt chocolate and butter in a medium saucepan.
- Stir in sugar, then add beaten eggs, vanilla extract, and mint extract.
- Combine flour and baking powder in a small bowl.
- Add the flour mixture to the chocolate mixture and mix well.
- Fill each cupcake liner with 2 tablespoons of batter.
- Bake at 350°F (175°C) for 13 to 15 minutes until a toothpick inserted barely comes out clean.
- Remove from oven and cool on a wire rack.
- Dust with powdered sugar once cooled.
