Ingredients

  • 2 1/2 oz. unsweetened chocolate
  • 1/2 cup butter or margarine
  • 1 scant cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon mint extract
  • 1/2 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • Powdered sugar for garnish
  • Strawberries for garnish

Instructions

  1. Line a muffin pan with 12 cupcake liners.
  2. Melt chocolate and butter in a medium saucepan.
  3. Stir in sugar, then add beaten eggs, vanilla extract, and mint extract.
  4. Combine flour and baking powder in a small bowl.
  5. Add the flour mixture to the chocolate mixture and mix well.
  6. Fill each cupcake liner with 2 tablespoons of batter.
  7. Bake at 350°F (175°C) for 13 to 15 minutes until a toothpick inserted barely comes out clean.
  8. Remove from oven and cool on a wire rack.
  9. Dust with powdered sugar once cooled.
  10. Garnish with sliced strawberries, if desired.
