Ingredients

  • 3 lb. new potatoes
  • 1 c. celery, chopped fine
  • 1 medium onion, chopped
  • 3 hard-boiled eggs, mashed
  • 1 1/2 c. mayonnaise
  • 3 Tbsp. white vinegar
  • salt
  • pepper

Instructions

  1. Boil the potatoes until tender.
  2. Peel the potatoes while warm.
  3. Slice the potatoes and add the vinegar. Let sit for 1 hour.
  4. Add the chopped celery, chopped onion, mashed eggs, mayonnaise, salt, and pepper.
  5. Mix well to combine all ingredients.
