Instructions

  1. Crush vanilla wafers into fine crumbs.
  2. In a very large container, mix sugar, salt, spices, and crumbs.
  3. Beat eggs and evaporated milk together and add to the dry mixture.
  4. Add candied orange peel, candied citron, candied cherries, raisins, and broken pecans, mixing well.
  5. Spoon the mixture into a tube pan completely lined with aluminum foil and greased.
  6. Decorate the top with whole candied pineapple slices and candied cherries.
  7. Cover with foil tightly and bake in a 225°F (107°C) oven for 2 1/2 hours.
  8. Remove the foil from the top for the last 30 minutes of baking.
  9. Cool completely in the pan.
  10. Remove from the pan, wrap in foil, and store in the refrigerator.
  11. Best enjoyed after aging for a few weeks, preferably made in September or October.
