  9. Continue cooking and lifting edges until the mixture is almost set (surface will be moist).
  10. Cook for about 6 minutes.
  11. Place the skillet under the broiler, 5 inches from heat.
  12. Broil for 1 to 2 minutes or until the top is set.
  13. Sprinkle with Parmesan or Romano cheese.
  14. Loosen the bottom of the frittata and slide it out onto a plate.
  15. Cut into wedges and serve.
