Ingredients

  • 1/2 lb. vermicelli
  • 1 small clove garlic, minced
  • 3 medium fresh tomatoes, diced
  • 1 (4 oz.) pkg. Mozzarella cheese, shredded
  • 1/4 c. grated cheese
  • 2 Tbsp. oil
  • 2 Tbsp. basil
  • 1/2 tsp. salt

Instructions

  1. In a frying pan, heat oil and cook garlic until tender.
  2. Stir in diced tomatoes, basil, and salt; heat through without overcooking.
  3. Cook vermicelli until al dente, then drain.
  4. Add cooked vermicelli to the tomato mixture, sprinkle with shredded and grated cheese, and serve.
