Ingredients

  • 1/4 cup onion
  • 1 cup grated Mozzarella cheese
  • 1 small can mushrooms
  • 1 cup green beans
  • 1 tomato, sliced thin
  • salt and pepper
  • 1 1/2 cups milk
  • 3/4 cup Bisquick
  • 3 eggs

Instructions

  1. Place onion, grated mozzarella cheese, green beans, and mushrooms in a greased 9-inch pie plate.
  2. Whip milk, Bisquick, eggs, salt, and pepper together until well combined.
  3. Pour the batter over the vegetables in the pie plate and top with sliced tomato.
  4. Sprinkle with Parmesan cheese.
  5. Bake at 400°F (200°C) for 35 minutes until golden and set.
