Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup raisins
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups water
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon cinnamon

Instructions

  1. Boil raisins and water for 5 to 10 minutes to soften.
  2. Drain raisins, saving 1 cup of water.
  3. Add baking soda to the saved water and set aside.
  4. Cream together the sugar and shortening.
  5. Add beaten eggs, water with baking soda, and vanilla extract to the creamed mixture.
  6. Gradually add the dry ingredients (flour, salt, cinnamon) to the wet mixture.
  7. Stir in the raisins.
  8. Pour batter into a greased baking pan and bake at 350°F for 30 minutes.
  9. Allow the cake to cool completely, then frost with strudel topping.
