Ingredients

  • 8 oz. can crushed pineapple
  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups confectioners sugar

Instructions

  1. Drain the crushed pineapple, reserving 3 tablespoons of juice.
  2. Set the pineapple aside and set the reserved juice aside for the frosting.
  3. In a mixing bowl, cream together the shortening and brown sugar until fluffy.
  4. Add the egg and vanilla extract, beating well.
  5. Stir in the crushed pineapple.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  9. Bake at 350°F (175°C) for about 10 minutes or until lightly golden.
  10. Allow cookies to cool completely before frosting.
  11. To make the frosting, mix the confectioners sugar with the reserved pineapple juice until smooth.
  12. Spread or pipe the frosting over cooled cookies.
