Ingredients

  • 10 oz. frozen raspberries
  • 1 cup sugar
  • 2 egg whites
  • 1 tablespoon lemon juice
  • 1 cup whipped whipping cream
  • 1/4 cup chopped roasted almonds
  • dash of salt
  • 1 baked 9-inch almond pie shell

Instructions

  1. Thaw and drain the frozen raspberries, reserving a few for garnish.
  2. Combine raspberries, sugar, egg whites, lemon juice, and a dash of salt. Beat for 15 minutes or until stiff peaks form.
  3. Fold in whipped cream and chopped roasted almonds.
  4. Spoon the mixture into a baked 9-inch almond pie shell, adding 1/2 teaspoon almond extract to the pastry crust.
  5. Freeze until the pie is firm, about 4 hours or overnight.
  6. Garnish with reserved raspberries before serving.
