Ingredients

  • 20 oz. loaf bread
  • 1/2 cup raisins
  • 2 cups milk
  • 1 cup crushed pineapple
  • 1 cup red cherries
  • 1 cup green cherries
  • 1 cup grated coconut
  • 1 cup margarine
  • 2 cups sugar
  • 6 eggs
  • 2 tablespoons vanilla
  • 1 teaspoon yellow food coloring

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, break bread into small pieces. Add raisins, milk, pineapple, red cherries, green cherries, and coconut. Mix well.
  3. In a separate large mixing bowl, cream together the margarine and sugar.
  4. Add eggs, vanilla, and yellow food coloring to the creamed mixture. Mix well.
  5. Combine the margarine mixture with the bread mixture and stir until evenly incorporated.
  6. Pour the combined mixture into a 3-quart baking pan.
  7. Bake for about 45 minutes to 1 hour, or until set and golden on top.
  8. Serve warm or at room temperature.
