Ingredients

  • 1 1/2 cups sugar
  • 2 eggs
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 medium can fruit cocktail (juice included)
  • 1 teaspoon vanilla
  • coconut (optional)
  • chopped nuts (optional)

Instructions

  1. Cream together the sugar and eggs until well combined.
  2. Sift the flour, baking soda, and salt, then gradually add to the creamed mixture.
  3. Stir in the fruit cocktail and vanilla until evenly incorporated.
  4. Pour the batter into a greased and floured 15 x 10 x 1 inch pan.
  5. Sprinkle with coconut and chopped nuts if desired.
  6. Bake at 350°F (175°C) for 25 minutes or until golden brown.
  7. While still warm, drizzle with a glaze over the top before serving.
