Ingredients

  • 1 (21 oz.) can apple pie filling
  • 6 to 8 (8-inch) flour tortillas
  • 1 tsp. cinnamon
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup water

Instructions

  1. Spoon fruit filling evenly down the center of each tortilla; sprinkle evenly with cinnamon.
  2. Roll up each tortilla and place seam side down in a lightly greased 2-quart baking dish.
  3. Bring butter and the sugar, brown sugar, and water to a boil in a medium saucepan.
  4. Reduce heat and simmer, stirring constantly, for 3 minutes.
  5. Pour the butter mixture over the enchiladas.
  6. Let stand for 30 minutes.
  7. Bake at 350°F (175°C) for 20 minutes.
